Our hand trimmed and seared fillet has been wrapped in Mustard, mushroom pate and proscuttio then encased in pastry. All prepared by hand on site by our Master Butchers We recommend removing from the fridge 30-40 minutes before Pre heating a lightly dusted oven tray to 180°C Fan, Egg Wash then place in the centre and roast.  Cooking times greatly depend on the diameter of the fillet rather than the length so we guide all 3 sizes of wellington as below. Rare 25 mins Medium 30 mins Well done 40 mins The best way to make sure its cooked the way you like is using a probe thermometer as all ovens can vary, readings should read Rare 52°C Medium 60° Well Done 71°C Dont forget to rest for at least 10 minutes before serving!
